Breakfast For Dinner AKA Brinner

Happy Belated St Patricks Day everyone! Sorry I forgot, I blame it on Tullemore Dew (and green beer). Anyway, since we missed Sunday breakfast we decided that tonight was the perfect day to make it up. Brinner it is!

If you never heard of Brinner before, it is Breakfast For Dinner. I'm sure you've had it, whether just a bowl of cereal or drunkingly made pancakes after hitting Happy Hour too hard, Brinner is the best idea since sliced bread.

From Top Left To Bottom Right

Blueberry Cream Pancakes

2 cups Flour

3 tbsp Sugar

1 tsp Salt

2 tbsp Baking Powder

2 Beaten Eggs

1/4 cup Sour Cream

1 3/4 cup Milk

1/2 cup Blueberries

Combine first four ingredients and set aside. Mix next three ingredients, slowly incorporate into dry ingredients, then add bluberries, and stir well to combine. Spray a non stick pan with cooking spray and allow to heat up while the mix sits. Ladle onto pan, cook until bubbling, and flip. This recipe should make 9-6 inch pancakes.

Maple Sage Sausage

1 pound Loose Sweet Sausage

1 tbsp Ground Sage

3 tbsp Maple Syrup

Preheat oven to 400 degrees. Combine all ingredients and mix well. Form sausage into 2 inch balls and set on an ungreased cookie tray. Cook for 20 minutes. Makes 6 sausages.

Creamy Home Fries

2 tbsp Olive Oil

6 Bacon Strips

2 Russet Potatoes

1/4 cup Chopped Green Onions

1/2 cup softened Cream Cheese

1/2 cup Shredded Cheddar Cheese

Preheat oven to 400 degrees. Heat the oil in a cast iron skillet and fry bacon. Remove bacon from skillet and cook the potatoes in the skillet until browned. Transfer potatoes to drain on a plate lined with paper towels. Chop bacon into bits. Combine with potatoes, Green Onions, and Cream Cheese and place in oven for 10 minutes until Cream Cheese is warmed. Sprinkle Cheddar Cheese on top and heat until cheese is melted. Serves 4.

Cottage Eggs

6 Eggs

1/4 cup Cottage Cheese

1/4 cup Milk

1 tbsp Dried Parsley

Salt

Pepper

Spray a non stick pan with cooking spray and place over med/high heat until warmed. Combine all ingredients and cook, stirring and mixing constantly. Serves 4.

This was a great break from Leftover Thursday (especially since we barely had any), though this is our typical Sunday breakfast menu. The guys gobbled this down and there was enough leftover for the Tornado to have for breakfast in the morning (we're not big breakfast at breakfast time adults, can you tell).
